Raw Food Monday

When we were still living in Honduras we had a neighbour, a yoga teacher, who frequently enlightened us about the benefits of the raw food diet. The idea is very simple, you only eat raw food and it’s good for you.
In one of her newsletters she sent us this link to a video describing the story of Evita Ramparte, who tells us about how she has cured herself of ovarian cancer by changing her lifestyle completely. Here is the link www.vimeo.com/13607303, in case you are interested.

Her story inspired us enough to try out the raw food diet for one day a week. Today was our first Raw Food Monday and we did very well.

For breakfast we had a smoothie containing apple, papaya, peach, apricot, banana and we cheated by adding some yoghurt we had to finish (normally raw food dieters don’t eat milk products, I think). Lunch was our highlight. We had courgette and carrot julienne (cut like pasta) with a fantastic sauce: sun dried tomatoes, nuts, avocado, sesame seed, garlic, celery, radishes, olives, olive oil, red and yellow pepper, papaya vinegar and parsley.

We also snacked on vegetables throughout the day, although that needs to be revolutionized a little for next week…

In the evening we had a soup made up of another bunch of vegetables that was really yummy, but it couldn’t beat lunch. We were very positively surprised by the vegetable pasta idea, and we decided that it may have tasted so good because we tricked our minds into thinking that it was ‘proper’ pasta.

For us the idea is to get a little bit more creative with food, to eat more healthily, to cleanse and I guess it’s a challenge. It has to be said that doing this in Ecuador is very easy because a large variety of cheap fruit and vegetables are readily available all year long. But it can be done in the North too. A good food processor is vital for the task.
